EVERYONE’S FAVORITE CASHEW-TOMATO SOUP
Serves 3 to 4
1 cup raw cashews, soaked in 1 cup water for 3 hours or overnight
1 tablespoon olive oil
½ onion, minced
3 cloves garlic, minced
1 teaspoon dried basil
½ teaspoon dried oregano
1 can (28 ounces) diced tomatoes
1 tablespoon sugar (optional)
Salt to taste
Fresh basil, for garnish
Place the cashews and their soaking water in a blender and blend until smooth and resembling chunky milk (there can be a few small chunks of cashew).
In the olive oil on low sauté the onion until translucent, about 5 minutes. Add the garlic, basil, and oregano and continue cooking another 1 to 2 minutes. Add the canned tomatoes and bring to a boil; then simmer until the tomato sauce is heated through and slightly thickened, about 10 minutes. Add the sugar and salt to taste.
Add the blended cashew mixture to the tomato sauce. Stir until everything is incorporated. Blend two-thirds of the soup in a blender until completely smooth and there are no more chunks of tomato or cashew. Combine the blended soup with the remaining one-third of unblended soup. This creates a good consistency. Stir again, and garnish with plenty of fresh basil.
